Sweet and Simple Homemade Caramel Syrup

Heat sugar over medium heat until it starts to melt, stirring constantly. The key to making great syrup is to "shake" or "toss" the pan; Stirring with a spoon can cause the caramel to stick to it, it's easier and more effective to use a "shaking" technique with the pan to stir the sugar. The sugar will begin to clump and turn a golden brown and start to liquify. Once the sugar is almost caramelized add the 1 cup boiling water to pan. Use caution when pouring as this can cause a burst of hot steam. Continue shaking pan until thoroughly mixed. Once mixed allow to sit over heat for an additional 30 seconds. Remove from heat and allow mixture to cool. Use a funnel to pour into container, keep refrigerated. Caramel will stay good for up to two months. *** The process is very simple...but you will need a little patience - it takes a while for the sugar to turn to a liquid. |
